Medallions of semi-cooked foie-gras, fine foccacia grilled in walnut oil, almond milk emulsion, walnut apple marmalade.
Ice break: mango sorbet with lychee alcohol.
Dish
Slow-cooked French veal fillet, porcini cream, sweet potato gratin, celery mousse and crunch.
The cheese:
Espuma of camembert, toasted hazelnut burst, crunchy bread.
Dessert
La sphère surprise de l'échiquier, cocoa sorbet, tonka bean hot chocolate.
